Blanched Asparagus with Caviar Cream Sauce
Wednesday, April 17, 2024Caviar Cream Sauce is an ultimate sign of decadence and deliciousness. This sauce is incredibly rich and to cut through the richness, I balanced the sauce out with a simple blanched asparagus. I used dry white wine for the sauce, but if you have some Champagne or dry sparkling wine, feel free to use it. If using alcohol is not an option, you can try using sparkling cider, but the sauce will taste sweeter then. It's important to fold caviar into the sauce after it has cooled a bit or it would ruin the caviar.
Asparagus, Soft-Boiled Eggs and Caviar
Tuesday, April 09, 2024Caviar goes very well with different kinds of vegetables. Gently blanched fresh green asparagus with soft boiled egg pairs perfectly with rich creamy caviar that adds a touch luxury to every bite.
Argan oil, a specialty oil produced in Morocco, extracted from the seeds of the argan tree, known as Argania spinosa, has a distinctive nutty and robust flavour, but not overpowering, and it's best enjoyed as a finishing oil. It is hard to come by, so you may use hazelnut or walnut oil instead, or simply use olive oil.
Baked Fish with Anchovy Crust and Sauce Vierge
Friday, April 05, 2024The sauce vierge (which translates to “virgin sauce”) is a classic tomato-based French vinaigrette filled with olives and fresh herbs that will go perfectly with many dishes for the warmer days. It can be served at room-temperature or warm and goes perfectly with fish and other seafood. It was created in 1976 by the great French chef Michel Guérard. The sauce is fresh, bright and versatile and can be prepared up to a day in advance and stored in the refrigerator. Allow the sauce to come to room temperature before serving.

Monday, March 04, 2024Salmon Steaks with Caper and Anchovy Salsa
Thursday, February 29, 2024The umami-laden salsa prepared with capers, anchovies and herbs goes really well with grilled fish, meat and vegetables. It makes a nice dip for breadsticks or crudités, and is very good with boiled eggs. I used cilantro and dill for this quick and easy condiment recipe, but other herbs, like mint, arugula, tarragon and chives would make lovely substitutions.
Fennel and Anchovy Gratin with Parmesan
Thursday, February 15, 2024It’s so easy to make and put together this rich, flavourful and delicious side dish, which is perfect to serve with just about anything. First the fennels were blanched, then drained and baked with anchovy, heavy cream, nutmeg, thyme and Parmesan. If you want this keto and gluten free, replace the breadcrumbs with ground pork rinds or simply leave it out all together. Don't want to use Parmesan? Feel free to use other hard cheese like Grana Padano or Pecorino Romano.

Wednesday, February 07, 2024Hot smoked sprats and eggs are a marriage made in breakfast / brunch heaven. Whip up this delicious and healthy frittata with eggs, hot smoked sprats, Greek yoghurt, dill, and cherry tomatoes in less than half an hour. It's naturally gluten-free and keto friendly.
Sprat, or brisling, a small oily fish, is rich in high quality protein and beneficial omega-3 fatty acids. They're very similar to sardines in size, but have a somewhat meatier taste. The smoked flavor makes them special! You can leave the sprats intact, head on and guts in and eat them whole.

Zander and Leek Gratin with Provençal Crust
Friday, January 12, 2024A classic fish and leek bake with zander fish fillets, creamy leek and topped with a crunchy Provencal style crust, which can be used to top chicken, lamb and vegetables too. Traditionally, this crust is made with breadcrumbs and cheese, but using ground pork rind is another great alternative if you are on a low-carb or keto way of eating, plus it adds texture and flavour. It's perfect for a make-ahead meal. Just assemble the entire gratin in advance and store it in the refrigerator until you’re ready to pop it in the oven.
